I've been craving shrimp tacos, but you can't find them around here for less than $4 a piece and half the time they aren't that great. And between work, school and writing, I need something fast I can fix at night or pop into the crockpot in the morning. This one I made up as I went along and it was super easy and fast. I thought I would share.
2 lbs of small shrimp (frozen or fresh)
1 tsp minced garlic (you can use powdered too)
Salt and pepper
1 tbls of butter (or use Pam)
1 tsp of Cajun spice (if you want some kick)
Rinse small shrimp (if frozen, let it defrost in a collendar in the sink) with cold water and make sure it's been deveined. Melt butter and minced garlic on a low temp in a large frying pan. Once melted, raise the temp to medium heat and add onions. As they begin to become clear, add drained and blotted (w/ paper towel) shrimp to frying pan and add lime juice from the three limes. Add salt and pepper. I threw in a tsp of cajun spice for a little kick. It only takes four minutes or so to cook shrimp so chop tomato, lettuce (or whatever you like on your tacos) while they heat. When shrimp turn pink they are done. We use soft corn tortillas and heat them up in the microwave. Load up your tacos, squeeze a little more lime juice on, and you're set.
I added a can of no-fat refried beans as a side. To make those taste like homemade… Heat beans in a saucepan with a tsp of powdered garlic, pepper, cajun spice and some salt (to taste).
